Country Biscuits










1 1/2 cups Self Rising Flour
1/2 cup Flour
1/4 cup Shortening
3/4 cup Buttermilk (or) use 1 tsp. vinegar and 3/4 cup Milk


Preheat oven to 450 degrees.

In a large mixing bowl, combine flours and shortening and blend with pastry cutter until mixture looks like crumbs. Make a well in the center and pour in the buttermilk.  Blend just until the dough comes together. The dough will be very sticky.
Turn dough onto floured surface and knead. Press into a 1-inch thick. Cut out biscuits with a knife, being sure to push straight down through the dough. Your biscuits will be square or rectangle, but you won't have to roll out your dough a second time, making it tough.  Place biscuits on lightly floured baking sheet. 
Bake until biscuits are tall and light gold on top, 15 to 18 minutes.

Optional:  Add 1 cup of shredded cheese to the recipe for "Cheesy Biscuits"
                     Add 1/2 each of shredded cheese and Chopped Cooked Bacon for
                      "Cheesy Bacon Biscuits"
                      You can even use your cookie cutters to make them the shape you like. 
                      I used a Christmas Tree  Cookie Cutter for a Christmas Tea at church.
